Gazpacho or Spanish Cold Tomato Soup

Difficulty of the gazpacho: very easy

Preparation time: 10 mins

Serves: 4 people

Ingredients for the perfect gazpacho:

  • Lb ripe tomatoes
  • 1 Lb green peppers
  • 1 garlic clove
  • 1/2 cucumbers
  • 1/2 cup of olive oil
  • 4 teaspoons of red wine vinegar
  • 1 slice of bread (any kind will do)
  • A pinch of salt

Preparation:

  1. Scald and peel the tomatoes and put them inside the blender.
  2.  Add the peppers, garlic, bread, and cucumber (peeled and sliced).
  3. Blend for a few seconds and add the salt, vinegar, and olive oil.
  4. Strain the liquid through a mesh strainer and let it cool down for at least an hour.
  5. Store in the refrigerator before serving.

Local tips:

  • Gazpacho needs to be served very cold, sometimes even with ice cubes.
  • Serve the gazpacho in individual cups with croutons and/or a boiled egg and slices of cured ham on top.
