Gazpacho or Spanish Cold Tomato Soup…

Difficulty of the gazpacho: very easy
Preparation time: 10 mins
Serves: 4 people
Ingredients for the perfect gazpacho:
- Lb ripe tomatoes
- 1 Lb green peppers
- 1 garlic clove
- 1/2 cucumbers
- 1/2 cup of olive oil
- 4 teaspoons of red wine vinegar
- 1 slice of bread (any kind will do)
- A pinch of salt
Preparation:
- Scald and peel the tomatoes and put them inside the blender.
- Add the peppers, garlic, bread, and cucumber (peeled and sliced).
- Blend for a few seconds and add the salt, vinegar, and olive oil.
- Strain the liquid through a mesh strainer and let it cool down for at least an hour.
- Store in the refrigerator before serving.
Local tips:
- Gazpacho needs to be served very cold, sometimes even with ice cubes.
- Serve the gazpacho in individual cups with croutons and/or a boiled egg and slices of cured ham on top.
