Difficulty of the gazpacho: very easy Preparation time: 10 mins Serves: 4 people Ingredients for the perfect gazpacho: Lb ripe tomatoes 1 Lb green peppers 1 garlic clove 1/2 cucumbers 1/2 cup of olive oil 4 teaspoons of red wine vinegar 1 slice of bread (any kind will do) A pinch of salt Preparation: Scald and peel the tomatoes and put them inside the blender. Add the peppers, garlic, bread, and cucumber (peeled and sliced). Blend for a few seconds and add the salt, vinegar, and olive oil. Strain the liquid through a mesh strainer and let it cool down for at least an hour. Store in the refrigerator before serving. Local tips: Gazpacho needs to be served very cold, sometimes even with ice cubes. Serve the gazpacho in individual cups with croutons and/or a boiled egg and slices of cured ham on top.
